Yum. Yet another recipe proving that squash is indeed good.  Yes! <\/p>\n<p>1 medium butternut squash (about 2 lbs), peeled and cut into 3\/4 inch cubes<br \/>\n1 large onion cut into 1\/2 inch pieces<br \/>\n1 small head of garlic, separated and peeled<br \/>\n1 lb penne<br \/>\n8 oz goat cheese<br \/>\n1 c chopped, fresh basil<br \/>\ngrated parmesan cheese<br \/>\n1 c chopped pecans<\/p>\n<p>Preheat oven to 425<br \/>\nPut squash, onions and garlic cloves on greased baking sheet. Drizzle with olive oil and sprinkle with salt and pepper to taste. Bake for 40-45 minutes or until squash is fork tender.<br \/>\nCook penne, reserving 2 c cooking liquid.<br \/>\nPut paste, goat cheese and 1 c of cooking liquid into bowl and toss until cheese is melted. If cheese is too thick add more of the reserved cooking liquid.<br \/>\nAdd squash mixture and basil.<br \/>\nTop with parmesan cheese.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Penne With Butternut Squash.
