{"id":82,"date":"2010-03-01T21:28:57","date_gmt":"2010-03-02T03:28:57","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=82"},"modified":"2011-09-18T19:41:14","modified_gmt":"2011-09-19T00:41:14","slug":"roasted-cauliflower","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=82","title":{"rendered":"Roasted Cauliflower"},"content":{"rendered":"<p>This recipe further proves my theory that people don&#8217;t like vegetables because they insist on boiling all the flavor and texture out of them.\u00a0 If you haven&#8217;t tried roasted cauliflower, do it!\u00a0 Then try mashed cauliflower&#8230;you won&#8217;t believe it!<\/p>\n<p>This recipe was pretty good!\u00a0 The cauliflower part was awesome.\u00a0 The dressing is good on it, but I think next time I will just roast the cauliflower, squeeze some lime juice over it, and sprinkle some chopped cilantro on top.<\/p>\n<p><strong>Roasted Cauliflower with Cilantro Dressing<br \/>\n<\/strong><a href=\"http:\/\/www.seriouseats.com\/recipes\/2010\/02\/the-crisper-whisperer-chili-roasted-cauliflower-cilantro-dressing-recipe.html\">Serious Eats<\/a><\/p>\n<h5>Ingredients<\/h5>\n<p>1 head cauliflower<br \/>\n2 tablespoons olive oil<br \/>\n2 teaspoons chili powder<br \/>\n1\/2 teaspoon salt, divided<br \/>\nFreshly ground black pepper<br \/>\n1\/4 cup extra-virgin olive oil<br \/>\nJuice of 1\/2 lime<br \/>\n1 teaspoon white wine vinegar<br \/>\n1\/2 small bunch cilantro (leaves and delicate stems), roughly chopped<br \/>\n2 small cloves garlic. roughly chopped<\/p>\n<h5>Procedure<\/h5>\n<p><strong>1.<\/strong> Preheat oven to 425\u00b0F with a rack in the center. Wash and thoroughly dry the cauliflower and cut into large florets.<\/p>\n<p><strong>2.<\/strong> In a small bowl, combine the two tablespoons olive oil, chili powder, 1\/4 teaspoon of the salt and some freshly ground black pepper. Place the cauliflower florets on a baking sheet and toss well with the oil mixture. Roast for 25 minutes, turning once with a spatula mid-roasting.<\/p>\n<p><strong>3.<\/strong> While the cauliflower roasts, combine the extra-virgin olive oil, lime juice, vinegar, cilantro, garlic, and remaining 1\/4 teaspoon salt in a blender.
