I love Chicken Pot Pie, but always worry about the fat\/salt\/calorie count. This recipe is better than most I&#8217;ve seen.\u00a0 It&#8217;s from Real Simple, with my adaptations!<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>2\u00a0boneless, skinless chicken breasts<\/li>\n<li>1\u00a0tablespoon\u00a0olive oil<\/li>\n<li>1\u00a0onion, chopped<\/li>\n<li>1 clove garlic, chopped<\/li>\n<li>4\u00a0carrots, diced<\/li>\n<li>4 stalks celery, chopped<\/li>\n<li>3\u00a0tablespoons\u00a0all-purpose flour<\/li>\n<li>1\/2\u00a0cup\u00a0dry white wine<\/li>\n<li>1.5\u00a0cups\u00a0skim milk<\/li>\n<li>1\/2 cup whipping cream<\/li>\n<li>1\u00a010-ounce package\u00a0frozen peas<\/li>\n<li>3\/4 tablespoon\u00a0fresh thyme<\/li>\n<li>kosher salt and black pepper<\/li>\n<li>1\u00a09-inch store-bought piecrust, thawed if frozen<\/li>\n<\/ul>\n<div>\n<h3>Directions<\/h3>\n<ol>\n<li>Heat oven to 400\u00b0\u00a0F. Salt &amp; pepper chicken with some olive oil, roast chicken in oven 30-35 minutes; let cool, then shred.<\/li>\n<li>Meanwhile, heat the oil in a saucepan over medium heat. Add the onions, garlic,\u00a0carrots and celery, and cook, stirring, until they begin to soften, 6 to 8 minutes (do not let them darken). Sprinkle the flour over the vegetables and cook, stirring, for 1 minute.<\/li>\n<li>Add the wine and cook until evaporated, about 5 minutes. Add the milk and simmer until the sauce thickens, 2 to 3 minutes. Stir in the chicken, peas, thyme, \u00be teaspoon salt, and \u00bc teaspoon pepper. Transfer to a shallow 1\u00bd- to 2-quart baking dish.<\/li>\n<li>Lay the crust on top, pressing to seal. Cut several vents in the crust.
