Time to change that! This recipe is barely adapted from <a href=\"http:\/\/allrecipes.com\/recipe\/italian-sausage-soup-with-tortellini\/\">Allrecipes<\/a>.<\/p>\n<p>1 pound hot Italian sausage, casings removed<br \/>\n1 cup chopped onion<br \/>\n2 cloves garlic, minced<br \/>\n5 cups beef broth<br \/>\n1\/2 cup water<br \/>\n1\/2 cup red wine<br \/>\n1-28 oz can diced tomatoes, diced<br \/>\n1 cup thinly sliced carrots<br \/>\n1\/2 tablespoon packed fresh basil leaves<br \/>\n1\/2 teaspoon dried oregano<br \/>\n1-8 ounce can tomato sauce<br \/>\n1 1\/2 cups sliced zucchini<br \/>\n9 ounces fresh tortellini pasta<br \/>\n3 tablespoons chopped fresh parsley<\/p>\n<p>Directions<br \/>\n1) In a 5 quart Dutch oven, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.<\/p>\n<p>2) Saute onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. Skim fat from the soup.<\/p>\n<p>3) Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes.
