{"id":301,"date":"2011-10-16T21:08:15","date_gmt":"2011-10-17T02:08:15","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=301"},"modified":"2011-10-16T21:08:15","modified_gmt":"2011-10-17T02:08:15","slug":"cuban-style-grilled-salmon","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=301","title":{"rendered":"Cuban-Style Grilled Salmon"},"content":{"rendered":"<p>We&#8217;ve made Salmon Sundays a pretty regular tradition here.\u00a0 Usually Matt fires up the grill and makes Cedar-Planked Salmon, but this was a good change of pace and worked great on my grill pan.\u00a0 This was delicious meal that came together easily.<\/p>\n<p>Cuban-Style Grilled Salmon<br \/>\nFood Network Magazine, July\/August 2011<\/p>\n<p>1\/4 cup extra virgin olive oil<br \/>\nJuice of two lemons or limes<br \/>\n2 large cloves garlic, minced<br \/>\n2 large shallots, minced<br \/>\n1 teaspoon ground cumin (we omitted this)<br \/>\n1 teaspoon cayenne pepper<br \/>\nKosher salt<br \/>\n1\/2 bunch cilantro, roughly chopped<br \/>\n4 6-oz center-cut salmon fillets, skin removed<br \/>\n1 14-oz can hearts of palm, cut into 1-inch pieces<br \/>\n1 pint cherry or grape tomatoes, halved<br \/>\nVegetable oil, for brushing<br \/>\n2 cups mixed salad greens<\/p>\n<p>Preheat a grill to medium high.\u00a0 In a large bowl, whisk 2 tablespoons olive oil, the juice of one lemon, the garlic, shallots, cumin, cayenne, 1 teaspoon salt and half of the cilantro.\u00a0 Add the salmon and turn to coat.\u00a0 Let marinate 15 minutes at room temperature.<\/p>\n<p>Meanwhile, toss the hearts of palm and tomatoes in a bowl with the remaining 2 tablespoons of olive oil, the juice of the remaining lemon, and the rest of the cilantro.\u00a0 Season with salt.<\/p>\n<p>Brush the grill with vegetable oil.\u00a0 Grill the salmon round side down until marked on the bottom, about 4 minutes.\u00a0 Turn and continue grilling until marked on the other side and cooked through, 2 to 3 more minutes.\u00a0 Divide the salmon among plates.\u00a0 Serve with the greens and hearts of palm salad; drizzle the juices from the salad over the greens.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>We&#8217;ve made Salmon Sundays a pretty regular tradition here.\u00a0 Usually Matt fires up the grill and makes Cedar-Planked Salmon, but this was a good change of pace and worked great on my grill pan.\u00a0 This was delicious meal that came together easily.
