{"id":181,"date":"2011-09-18T18:22:08","date_gmt":"2011-09-18T23:22:08","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=181"},"modified":"2011-09-21T08:53:09","modified_gmt":"2011-09-21T13:53:09","slug":"chicken-fajita-chowder","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=181","title":{"rendered":"Chicken Fajita Chowder"},"content":{"rendered":"<p>This is a good soup that tasted different than I expected.\u00a0 The peppers give it a sweet flavor.\u00a0 Overall, a very easy meal.<\/p>\n<p>Fajita Chicken Chowder<br \/>\nTaste of Home Feb\/March &#8217;11<\/p>\n<p>1 lb. boneless skinless chicken breasts, chopped<br \/>\n1 each medium green, sweet red and yellow peppers, chopped<br \/>\n1 medium onion, chopped<br \/>\n2 Tbsp olive oil<br \/>\n3 cups water<br \/>\n2 cups frozen corn<br \/>\n1 cup uncooked brown rice<br \/>\n15 oz can green enchilada sauce<br \/>\n4 oz can chopped green chilies<br \/>\n1\/4 tsp salt<br \/>\n1 cup shredded Mexican cheese blend<br \/>\n8 oz sour cream<br \/>\nTortilla chips and chives for garnish<\/p>\n<p>In a dutch oven over medium-high heat, cook and stir the chicken, peppers, and onion in oil until vegetables are crisp-tender.\u00a0 Stir in the water, corn, rice, enchilada sauce, chilies and salt.\u00a0 Bring to a boil.\u00a0 Reduce heat; cover and simmer for 35-40 minutes or until rice is tender.\u00a0 Remove from heat.\u00a0 Stir in cheese and sour cream until cheese is melted.\u00a0 Serve with chips and chives if desired.<!--more--><!--more--><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This is a good soup that tasted different than I expected.\u00a0 The peppers give it a sweet flavor.\u00a0 Overall, a very easy meal.
