{"id":168,"date":"2011-01-20T22:27:23","date_gmt":"2011-01-21T04:27:23","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=168"},"modified":"2011-09-18T20:08:27","modified_gmt":"2011-09-19T01:08:27","slug":"black-bean-tomato-soup","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=168","title":{"rendered":"Black Bean Tomato Soup"},"content":{"rendered":"<p>This was so good that I wanted to post it right away!\u00a0 I&#8217;ve made at least two other black bean soups, and this blows them both out of the water.\u00a0 It&#8217;s from<a href=\"http:\/\/thekitchensinkrecipes.com\/\"> The Kitchen Sink Recipes<\/a>, which I started reading a few months ago, and her recipes always look delicious!<\/p>\n<p>I used my immersion blender (thanks, Mom!) to blend this, but I didn&#8217;t totally puree it.\u00a0 Yummy!\u00a0 (By the way, the chipotle powder makes this spicy.\u00a0 Remember, you can always add more! :))<\/p>\n<p><a href=\"http:\/\/thekitchensinkrecipes.com\/2008\/09\/17\/blender-buddy-optional-but-recommended\/\">Black Bean Tomato Soup<\/a><\/p>\n<p>2 center-cut bacon slices, chopped<br \/>\n1\/2 cup chopped onion (about 1 small)<br \/>\n1\/4 cup chopped celery<br \/>\n1 teaspoon chipotle chile powder<br \/>\n1 garlic clove, minced<br \/>\n1\/4 teaspoon freshly ground black pepper<br \/>\n1 (15-ounce) can black beans, rinsed and drained<br \/>\n1 (14.5-ounce) can tomatoes, undrained<br \/>\n1 (14-ounce) can fat-free, less-sodium chicken broth (or homemade)<br \/>\nGarnishes: sour cream, slivered scallions, lime wedges, cilantro leaves, tortilla chips<\/p>\n<p>Cook bacon in a large saucepan over medium heat until crisp. Remove  bacon with a slotted spoon, reserving 1 teaspoon drippings in pan; set  bacon aside.<\/p>\n<p>Add onion and celery to pan; cook 5 minutes or until celery is  tender. Stir in 2 teaspoons cumin, chile powder, and garlic; cook 1  minute. Stir in bacon, pepper, beans, tomatoes, and broth; bring to a  boil. Cover, reduce heat, and simmer 10 minutes.<\/p>\n<p>Place half of bean mixture in a blender. Remove center piece of  blender lid (to allow steam to escape); secure blender lid on blender.  Place a clean towel over opening in blender lid (to avoid splatters).  Blend until smooth. Pour into a large bowl.
