{"id":145,"date":"2011-01-04T20:35:46","date_gmt":"2011-01-05T02:35:46","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=145"},"modified":"2011-09-18T20:08:36","modified_gmt":"2011-09-19T01:08:36","slug":"chinese-broccoli-beef","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=145","title":{"rendered":"Chinese Broccoli Beef"},"content":{"rendered":"<p>Made this tonight in my new wok.\u00a0 Recipe from Steamy Kitchen.<\/p>\n<p>1 lb (460 g) top sirloin or flank steak, sliced into 1\/8-in (3-mm)-thin strips<\/p>\n<p>For the marinade<br \/>\n1\u00bd teaspoons soy sauce<br \/>\n1 teaspoon cornstarch<br \/>\n\u00bd teaspoon cooking oil<\/p>\n<p>For the Stir-fry Sauce<br \/>\n3 tablespoons oyster sauce<br \/>\n2 teaspoons Chinese <a title=\"rice wine\" href=\"http:\/\/newasiancuisine.com\/4145-rice-wine.html\">rice wine<\/a> (or dry sherry)<br \/>\n2 teaspoons black vinegar<\/p>\n<p>For the Broccoli<br \/>\n1\u00bd lb (700 g) broccoli, cut into bite-sized florets<br \/>\n\u00bd teaspoon kosher or sea salt<br \/>\n1 tablespoon cooking oil<br \/>\n1 tablespoon minced garlic<\/p>\n<p>Marinate the beef in soy sauce, cornstarch and the \u00bd teaspoon of oil for 10 minutes at room temperature.<\/p>\n<p>In a small bowl, mix together the stir-fry sauce ingredients <em>(I added 1 teaspoon of chile garlic sauce for some kick!)<\/em>.<\/p>\n<p>In a wok or large frying pan, add 1 inch (2.5 cm) of water and salt  and bring to a boil. Add the broccoli and cover to steam for 3 minutes.  Broccoli should be bright green, crisp tender and you should be able to  pierce the stem with a fork. Drain.<\/p>\n<p>Discard the water in the pan and dry the pan well. Heat the pan over  high heat and when hot, add the 1 tablespoon of cooking oil and swirl to  coat. Add the garlic and fry for 15 to 30 seconds, until fragrant. Add  the steak strips, keeping them in one layer and fry 30 seconds. Flip the  strips and fry the other side.<\/p>\n<p>Pour in the stir-fry sauce and stir to combine. Simmer until the  sauce is thick enough to coat a back of a spoon, about 30 seconds.
