{"id":138,"date":"2010-12-06T14:46:11","date_gmt":"2010-12-06T20:46:11","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=138"},"modified":"2011-09-18T19:59:27","modified_gmt":"2011-09-19T00:59:27","slug":"moroccan-stew","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=138","title":{"rendered":"Moroccan Stew"},"content":{"rendered":"<p>Here&#8217;s a good vegetarian meal that I recently made.\u00a0 If I did it again, I would make half the recipe (it makes a lot).\u00a0 We really enjoyed it!\u00a0 Thank you, Tyler Florence!<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>2 tablespoons olive oil, divided<\/li>\n<li>2 acorn squash, halved and roasted<\/li>\n<li>2 teaspoons cinnamon<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/cinnamon\/index.html\"><\/a><\/li>\n<li>1 cup lentils, rinsed and cleaned<\/li>\n<li>1 cup brown rice<\/li>\n<li>1 tablespoon coriander<\/li>\n<li>1 bay leaf<\/li>\n<li>2 tablespoons curry powder<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/curry-powder\/index.html\"><\/a><\/li>\n<li>Salt and pepper, to taste<\/li>\n<li>3 1\/2 cups vegetable stock, divided<\/li>\n<li>1 onion, chopped<\/li>\n<li>1\/2 cup dried apricots, chopped<\/li>\n<li>Fresh flat-leaf parsley and mint, for garnish<\/li>\n<\/ul>\n<p>Directions:<\/p>\n<div>\n<p>Halve the squash and remove the seeds and fibers. Brush the flesh  with 1 tablespoon of olive oil and sprinkle with cinnamon, salt and  pepper. Roast on a cookie sheet in a 350 degree F oven for about 25 minutes, until fork tender. Cool and set aside.<\/p>\n<p>Combine lentils and rice in a medium saucepan; add coriander, bay leaf, curry powder, salt and pepper. Pour in 3 1\/4 cups of broth to cover by at least 2 inches. Turn the heat to medium and cook 30 to  45 minutes, stirring frequently. If you need to add more liquid to keep  the mixture wet do so, a little at a time.<\/p>\n<p>Meanwhile, place 1 tablespoon of olive oil in a small saucepan over medium heat. Add onions and cook, stirring until softened, about 5  minutes.  Rehydrate the apricots with remaining 1\/4 cup vegetable stock<a href=\"http:\/\/www.foodterms.com\/encyclopedia\/stock\/index.html\"><\/a>.   Stir in the lentils and rice. Cook until heated through, about 5  minutes.  Bring the components together by spooning the mixture into the  roasted acorn squash. Season with salt and pepper.
