{"id":12,"date":"2010-01-30T04:19:55","date_gmt":"2010-01-30T10:19:55","guid":{"rendered":"http:\/\/thewilhelmscook.com\/?p=12"},"modified":"2011-09-18T19:07:19","modified_gmt":"2011-09-19T00:07:19","slug":"pork-fat-rocks-exhibit-a","status":"publish","type":"post","link":"http:\/\/thewilhelmscook.tempotech.net\/?p=12","title":{"rendered":"Pork Fat Rocks, Exhibit A"},"content":{"rendered":"<div>\n<p>It\u2019s winter in the Midwest, which causes me to seriously doubt some of my life choices.\u00a0 Why would one choose to live in a place where the sun doesn\u2019t shine for a week at a time?\u00a0 When there are plenty places in the world where people don\u2019t have to worry about wind chills and temperatures below zero, why do I live in Illinois, of all places?\u00a0 But, the silver lining is that I love soup.\u00a0 Not only is it filling and warming, but it freezes well and is great for taking to work.\u00a0 What more could you ask for?<\/p>\n<div>\n<br \/>\nSo I present to you tonight\u2019s dinner.\u00a0 Yes, this particular Friday night, I stayed in, made soup, and ate KALE.\u00a0 It\u2019s rough living such a glamorous life.\u00a0 This soup starts out with sausage, which definitely makes the soup.\u00a0 The kale is good \u2013 this is only the second time I\u2019ve cooked with it \u2013 but I might prefer this soup with zucchini or spinach (just barely cooked).\u00a0 Or maybe I needed to chop the kale a little more; it doesn\u2019t cook down as much as spinach.\u00a0 In any case, thought I would share because this is a really easy recipe that turned out pretty tasty!<br \/>\n<\/br><br \/>\n<\/p>\n<div>\n<div>Sausage, Cannellini, and Kale Soup<br \/>\n<em>modified from Fine Cooking, <\/em><em>Via <a href=\"http:\/\/www.yumsugar.com\/Italian-Sausage-White-Bean-Kale-Soup-Recipe-7137171\">Serious Eats<\/a> <\/em><strong> <\/strong><\/div>\n<p><\/p>\n<div><strong>Ingredients<\/strong><\/div>\n<div>1-1\/2 Tbs. extra-virgin olive oil<\/div>\n<p>1 lb. sweet or hot bulk Italian sausage, broken into bite-sized pieces<br \/>\n1 medium yellow onion, finely chopped (1-1\/2 cups)<br \/>\n1 medium carrot, peeled and finely chopped (3\/4 cup)<br \/>\n1 medium celery stalk, finely chopped (3\/4 cup)<br \/>\n1-1\/2 tsp. minced fresh rosemary<br \/>\n2 Tbs. tomato paste<br \/>\n2 large cloves garlic, minced (1 Tbs.)<br \/>\n1 quart homemade or lower-salt chicken broth<br \/>\nTwo 15-oz. cans cannellini beans, rinsed and drained<br \/>\n6 oz. Lacinato kale, center ribs removed, leaves chopped (about 4 firmly packed cups)<br \/>\n1 Parmigiano-Reggiano rind (1\u00d73 inches; optional)<br \/>\n1-1\/2 tsp. cider vinegar<br \/>\nKosher salt and freshly ground black pepper<br \/>\n<\/br><br \/>\n<strong>Directions<\/strong><\/p>\n<ol>\n<li>Heat 1 Tbs. of the oil in a 4- to 5-quart pot over medium heat. Add the sausage, crumbling. Cook until browned about 8 minutes.<\/li>\n<li>Add the onion, carrot, celery, and rosemary and cook, stirring occasionally, until the vegetables begin to soften, about 6 minutes.<\/li>\n<li>Add the tomato paste and garlic and cook until fragrant, 45 seconds. Add the broth, beans, kale, and Parmigiano rind (if using). Bring to a boil, reduce the heat to medium low, and simmer gently until the vegetables are tender, about 15 minutes.<\/li>\n<li>Bring to a simmer over medium-high heat. Cook 5 minutes more to meld the flavors.
